Almost all of ultra-processed food added

vegetable oil

look for the ingredient table on each of your food package, if you see soybean oil, canola oil, cottonseed oil, sunflower oil, corn oil, rapeseed oil, ... that is vegetable oil.  US mostly use soybean oil, UK mostly use rapeseed oil.

Vegetable can not extract oil, these oil are actually seed oil, use chemical and heat to convert waste (such as cottonseed) into unsaturated fat.

It was invented in US 1929, used for machine lubricant at the time. Later Crisco invented as edible oil.

These unsaturated fat is the most toxic. They are easily dioxide (molecule collapsed) when heated,  even in room temperature with a period of time. In your body dioxide vegetable oil (molecule collapsed) interact with your cell cause it malfunction.

avoid them, eat natural food instead.

70% of US diet is ultra-prcessed food(almost all of them include vegetable oil).

In grocery store, only buy natural food around outer area,

Don't buy in the aisles.

I grow up in china since 1970s.

From 1970s to early 90s, china only have farmer's market, all natural food, saling live fish, live chicken, local seasonal vegetable fruit.

Never heard of vegetable oil, chinese people largely use lard as cooking oil and unprocessed sesame oil.

US soybean oil introduced into china since mid to late 1990 as I remember. Befor that time, my mom cook use lard and another unprocessed very dark color very odor cold pressed certain seed oil ( I don't know what English called ).  Since late 1990s, a new kind of clear, no color, no odor cooking oil appear in the market. It also comes with healthy name, and overwhelming TV commercial ad to promote people to buy it. Now I know these toxic unsaturated fat are all about US soybean farmer and US food industry's profit. They don't care about chinese people's health much. Looks like they only care about their profit and don't care about US people's health either.

Around 2000, china joined WTO, walmart entered into china, super market chain started. Walmart are saling all kinds of vegetable oil.  Now no one use lard for cooking oil anymore. Vegetable oil including Soybean oil, corn oil, canola oil, was used everywhere in home, restaurant, food industry, school, hospital.  Western ultra-processed food including all kinds of vegetable oil saled in 250+ walmart in china. Wherever walmart open, it destroy local farmer's markets.

Research shows in 1980, the prevalence of diabetes in China was 0.67%, according to the WHO criteria. By 2013, the prevalence had increased to 10.9% using the ADA criteria.

NIH's research shows cardiac disorders, Stroke, coronary heart disease (CHD), rheumatic heart disease (RHD), heart failure (HF), congenital heart disease, pulmonary heart disease, and hypertension (HTN) incidence and death rates in the Chinese population were extremely low in the 1980s and early 1990s

All of above modern disease in china are extremely rare before early 1990s. Since later 1990s these modern disease increased 10 to 20 fold in very short period of time.

That exactly match the time line when soybean oil along with a series of ultra-processed food introduced into china.

Why I am pretty sure it is vegetable oil, not sugar.

Since china's sugar comsumption is all time lowest among 179 countries in the world. Chinese people almost don't eat any sweet things all the time.  But chinese people start to eat vegetable oil since mid to late 1990s. Now their diabete rate increased 20 fold. So does the cardiovacular disease.

Since chinese people start to eat vegetable oil, they are still very lean from outside looking. But they still get cardiovacular disease even at very early age like late 40s to 50s.

That exactly match the mouse trial French and US scientist conducted in 1970s. The mouse feed with vegetable oil looks lean but only have half of life (average 500 days).  The mouse feed with lard did not get fat, have average life of 1000 days.

California UC berkley scientist have done the similar trial, their vegetable oil feeding mouse get fat with diabetes, heart attack, die early while the lard feeding mouse get normal size with disease free. These mouse trial exactly match what happen on chinese people.

60 minutes TV show interviewed a polic officer in australia, who looks very fit from outside, but get heart attack in 40s. He claim it is because the fast food he eat cause this. Fast food use vegetable oil to fry chicken, burger source and salad dressing all use vegetable oil as main ingredient. He claim he never thought he can get heart attack because he believe he is fit all times. Now he know his fat is inside in blood vessels.  Fat clog his heart vessels. TV show don't tell audience why. I know a little bit why. These unsaturated fat like trans fat can reduce the healthy blood cholesterol level while increase the bad cholesterol level. It actually convert good one into bad one. The bad one is undigestable by human. Human don't have that kind of digestive enzymes to break it down. Then the bad one accumulated in your blood vessels until clog. That is exactly the reason why FDA start to ban Trans fat since 2015. Now if you look at every food package nutrition fact table, you will see Trans Fat is 0.  Trans fat is 0 does not means 0, FDA allow you mark as 0, if it contain less than 0.5% trans fat. If you eat multiple servings, you still get trans fat to block your heart vessels.
